Sliced potatoes make a fantastic side dish, snack, or even appetizer served with dip on the side. They're irresistibly crispy, yet softer than chips, and are so delicious paired with any protein or simply enjoyed on their own!
The best way to make sliced potatoes is in the air fryer. Air fryer potato slices use less oil than other cooking methods, but they have the perfect texture and don't lose out on crispiness. Fork tender, crispy potato slices paired with your favorite dipping sauce - what could be better?
Why air fry potato slices?
- It's fast: Air frying potato slices takes a fraction of the cooking time it would take to roast them in the oven. Including preheating the oven, it can take up to an hour to roast them in the oven, whereas air frying potato slices takes just 30 minutes total - including prep time! Learn more about How Air Fryers Work.
- The texture is perfect: Air fryer sliced potatoes have a crispy and golden-brown exterior with a soft and fluffy interior. The hot, circulating air cooks the sliced potatoes evenly, giving them the ideal texture.
- It uses less oil: You will use less oil when air frying potato slices than you would any other method. The air fryer does not need as much oil as other methods to make potatoes crispy.
Ingredients You'll Need and Why

- Yukon Gold Potatoes: These potatoes offer the best taste and texture. We're not peeling our potatoes (though you can if you'd like), so scrub them well before slicing. Slice using a sharp knife or mandolin into slices that are ¼ of an inch thick.
- Oil: Light olive oil or avocado oil works well to coat the potatoes and promote crispiness. Learn more: Our Favorite Oils to use for Air Frying.
- Seasonings: A blend of kosher salt, garlic powder, dried Italian seasoning, and black pepper enhances flavor. You can also use sea salt, but avoid table salt as it can add an unwanted metallic flavor to food when cooked. We recommend freshly cracked black pepper for best flavor. You can vary the seasonings as you please.

How to Air Fry Sliced Potatoes

Step 1 - Preheat the air fryer to 400°F. If your air fryer does not have a preheat function, set it to 400°F and allow it to cook for 5 minutes with nothing in the basket. Meanwhile, place the sliced potatoes in a medium mixing bowl and add oil with the seasonings. Gently mix to coat the potatoes.

Step 2 - When the air fryer is preheated, open it and pour the potatoes into the preheated air fryer basket in a single layer. It's okay if they overlap a little!

Step 3 - Air fry sliced potatoes for 15-20 minutes, until the potatoes are golden-brown and fork-tender. Shake the basket halfway through the cooking time. Set a timer to remember to shake the basket if your air fryer does not have a built-in reminder.

Step 4 - Remove the potatoes from the air fryer to a serving dish. Do this carefully using a spatula or by pouring the potatoes out onto the dish. When pouring, take care to hold the air fryer tray in place or it might fall out. Garnish with chopped chives or your favorite fresh herb, such as parsley! Enjoy!
Toaster Oven Style Air Fryer Instructions
The following instructions are for toaster-oven style air fryers with a tray, such as the Breville Smart Oven Air. Note that these models take longer to cook than air fryers with a basket.
- Preheat air fryer oven to 400°F
- Place the sliced potatoes in a medium mixing bowl and toss with oil and seasonings. Gently mix to coat the potatoes.
- When the air fryer is preheated, open the air fryer and spread the potatoes onto the air fryer tray in a single layer. It’s okay if they overlap a little.
- Air fry at 400°F for 18-23 minutes until potatoes are golden brown and fork tender, turning each potato slice over halfway through air frying if needed.
- Remove the potatoes from the air fryer to a serving dish and garnish with chopped chives or your favorite fresh herb such as parsley. Serve and enjoy!

Recipe Tips
- We leave the skin on the potatoes, so be sure to scrub them well. Otherwise, you could peel the potatoes if you prefer.
- If your potatoes are sliced thicker than pictured, then you will likely need to add more time to cook them to a crispy outside with a soft center.
- We recommend Yukon Gold potatoes for maximum flavor in this potato recipe, however, feel free to mix it up and try other potato varieties like russet potatoes or red potatoes.
- We use garlic powder in this recipe instead of fresh garlic. Fresh garlic tends to burn in the amount of time needed to air fry the potatoes. Want to roast garlic in the air fryer? Try our roasted garlic recipe!
- You can use your preferred oil. We recommend light olive oil or avocado oil. See Our Favorite Oils to use for Air Frying.
- Total time may vary depending on your specific air fryer, as all brands are different.
- If cooking in multiple batches, be sure to check on the remaining batches early, as they may cook more quickly.
Recipe Variations
- Add fresh herbs: Fresh herbs like thyme or rosemary are delicious with sliced potatoes. We love pairing these potatoes with dill and a tzatziki sauce, for example.
- Use your favorites: Paprika, smoked paprika, and onion powder are more examples of common choices for seasoning potatoes.
- Add some spiced: You can add spices like cayenne pepper, chili powder, or red pepper flakes to kick up the heat with this potato recipe.
- Chili seasoning: We love, love, love using our homemade chili seasoning with this sliced potatoes recipe, and highly recommend giving chili seasoning with these potatoes a try!
- Get cheesy: Try adding Parmesan cheese or cheddar cheese at the end for a cheesy twist. If you use cheddar cheese, you could also add sliced green onions and bacon bits to make loaded sliced potatoes with a small bowl of sour cream on the side. Need an easy bacon recipe to use? Our air fryer bacon does the trick!

Storage Instructions
Before storing, allow leftovers to cool. Then, store leftovers in an airtight container in the refrigerator for 3-4 days. When reheating, we recommend reheating in the air fryer for three to five minutes to restore them to their original crispiness.
