They're easy to make and less messy than other methods! You only need potatoes, seasoning, and chives (optional). Once you try air frying breakfast potatoes, you're going to want to make them this way every time!

Air Fryer Breakfast Potato Ingredients

- Potatoes: We recommend russet potatoes, as they will be the crispiest when air fried. However, you can also use red potatoes or Yukon gold potatoes, if you prefer. Just note, they will not be as crisp.
- Oil or bacon grease: If you have bacon grease, use it! If you don't, we recommend a neutral oil such as avocado oil or light olive oil. Learn more: Our Favorite Oils to use for Air Frying
- Kosher salt: Kosher salt works best for this recipe. We recommend it over table salt.
- Garlic powder and onion powder: Garlic and onion powder add the perfect kick of flavor to breakfast potatoes. All you need are these two seasonings and salt and pepper to make the perfect potatoes! To switch it up, try adding a teaspoon of paprika and some dried rosemary or thyme.
- Black pepper: We prefer freshly cracked black pepper, but pre-ground black pepper works as well.
- Fresh chives: Garnish your breakfast potatoes with chives for a burst of garlicky, onion-y flavor in every bite!

How to Air Fry Breakfast Potatoes

Season the diced potatoes - Dice potatoes and place them in a medium mixing bowl. Add oil, salt, garlic powder, onion powder, and pepper. Mix to fully coat the potatoes.

Preheat the air fryer and add the potatoes - Preheat your air fryer to 400°F. Once heated, open and pour the seasoned diced potatoes into the air fryer basket.

Air fry the potatoes - Air fry at 400°F for 20-25 minutes, or until your preferred crispness. Shake the basket every 5 minutes as they cook.
Toaster Oven Style Air Fryer Instructions
- Dice potatoes and place them in a large bowl. Add oil, salt, garlic powder, onion powder, and pepper. Toss to fully coat the potatoes.
- Preheat your air fryer to 400°F. Once heated, place the potatoes in a single layer on the tray set in the middle of the air fryer oven rack.
- Air fry at 400°F for 20-25 minutes, or until your preferred crispness. Use a wooden spoon to move the potatoes around every 5 minutes while they cook.
- Remove the potatoes from the air fryer to a serving dish. Garnish with chopped chives or fresh herbs, and enjoy!

- Dice potatoes as evenly as possible. A nice, small and even ¼ to ½ inch cubes cooks more evenly.
- If your potatoes are diced larger than pictured, you will likely need to add more cook time to get the same results.

FAQ
Russet potatoes are the best type of potato to use when making diced potatoes in the air fryer. They will crisp up more than other varieties of potato. However, red and gold potatoes also work well - they will just be softer.
Although soaking potatoes generally helps them crisp up, it is not necessary. If diced to an even, small size, such as with these home fries, russet potatoes crisp up very well without soaking.
