Ingredients for Air Frying Baby Potatoes

- Baby Potatoes: We used nibbles baby potatoes we found at ALDI, but any brand will work. Look for baby potatoes that are triple washed to make your prep work easy and fast. If your potatoes are larger than the potatoes we used, we recommend cutting them in half or even quarters, depending on size, so that you don't have to adjust the cooking time too much.
- Oil: We recommend using light olive oil or avocado oil according to your preference, but we have a guide to our favorite oils if you'd like more options.
- Kosher Salt: Or sea salt flakes! A coarse salt is the best when seasoning. Avoid using table salt; it doesn't have as good of a flavor.
- Garlic Powder: Adds a mild garlic flavor without the risk of burning that fresh garlic has.
- Dried Italian Seasoning: Use whichever Italian seasoning blend you prefer. If you don't have any Italian seasoning on hand, use ½ teaspoon of dried basil, dried oregano, dried thyme, dried parsley, dried rosemary, or a blend.
- Black Pepper: Freshly cracked black pepper is best!
- Fresh Herbs (for Garnish): This is optional, but fresh herbs sprinkled over air fryer mini potatoes adds so much flavor. Try fresh parsley or fresh chives.
Feel free to change up the seasonings or add additional seasonings if you like. A pinch of onion powder, Cajun seasoning, ranch seasoning, or Our Signature Chili Spice Blend are all great options.
You can also sprinkle the potatoes with a little Parmesan cheese, if you like. This is especially tasty with a squeeze of lemon.

Toaster Oven Style Air Fryer Instructions
The following instructions are for toaster-oven style air fryers with a tray, such as the Breville Smart Oven Air. Note that these models take longer to cook than air fryers with a basket.
- Preheat your air fryer oven to 400°F while you prepare the potatoes.
- Place baby potatoes in a medium mixing bowl and add 1 tablespoon oil with ½ teaspoon salt, ½ teaspoon garlic powder, ½ teaspoon dried Italian seasoning, and ¼ teaspoon pepper. Mix to coat the potatoes.
- Place the baby potatoes onto the air fryer tray in a single layer.
- Air Fry at 400°F for 12-14 minutes until fork tender, stirring them around halfway through air frying.
- Remove the potatoes from the air fryer to a serving dish and garnish with chopped chives, if desired. Serve and enjoy!

FAQ
You should always wash your potatoes no matter what cooking method you're using. Because potatoes grow underground, they often still have some clinging dirt or debris when you bring them home. Give them a gentle scrub to ensure they're nice and clean.
As long as you properly oil the potatoes, you should have no issue with the potatoes sticking to the basket. If needed, spray the basket with a bit of oil too, but make sure to use a cooking oil in a sprayer bottle (such as light olive oil or avocado oil) and not a pressurized cooking spray with additives, as these will break down the non-stick coating of your air fryer.
