Pico de Gallo with Mango
You've most likely tried pico de gallo before: it's a simple mix of tomatoes, onions, and jalapeño, combined with simple seasoning and citrus juice (typically lime juice). And oh, it is so delicious!
So, how do you make that even better? Ripe mangoes! Mango pico de gallo is truly delicious. It adds a sweetness to the vibrant, spicy flavors of pico de gallo, making it a perfect pairing for a variety of dishes like fish tacos, fajita steak, shrimp, roast chicken, and more.
It's easy to make pico de gallo with mango, too. All you have to do is dice the ingredients and mix them in a bowl. We'll explain how in our step-by-step guide below!
Mango Pico de Gallo Ingredients
- Mango: Mangoes come in a few different varieties, typically ranging from green to yellow or red. Ripe mangoes will be slightly soft when you press on them; if they're too soft, they're over-ripe, and if they're hard, they aren't ripe yet. Ripe mango will also have a sweet smell. You want to make sure you pick ripe mangoes for making pico de gallo.
- Roma Tomatoes: We're using roma tomatoes for this recipe, but any medium to large tomato variety you prefer will work well. Smaller cherry tomatoes, are harder to work with when making pico de gallo, and we don't recommend using them.
- Jalapeno Pepper: Jalapenos add a kick to pico de gallo that is irresistible when paired with the sweet mango and sharp onion. If you don't like any spice at all, you can use green, yellow, or red bell pepper, which will add crunch and flavor to your pico de gallo without overpowering the other ingredients. We highly recommend jalapeno, however.
- Red Onion: Sharp and flavorful red onion is the perfect variety of onion to use for pico de gallo; especially pico de gallo with mangoes. For substitutions, you can also use white onion! Yellow onion will most likely be too sweet.
- Limes: Fresh lime juice is a must for pico de gallo. Not only does it keep it fresh - literally - but it also adds so much flavor.
- Fresh Cilantro: If you don't like cilantro, feel free to replace it with parsley or leave it out entirely. We know how it goes.
- Salt and Pepper: Kosher salt and freshly cracked black pepper are best. You can also use sea salt.

The Number One Rule to Making Pico de Gallo
To make the best pico de gallo, with or without mangoes, be sure to finely dice all of your ingredients. There should be no medium to large pieces; you want all of your ingredients to be finely diced. This will give it the best texture for dipping tortilla chips or for using as a taco topping. Use a sharp knife or a fine vegetable slicer and dicer if you have one.
How to Make Mango Pico de Gallo

Finely dice mangoes, jalapenos, red onions, and roma tomatoes. Add all ingredients to a large bowl and toss together until fully combined. Taste and adjust the flavors to your liking, adding additional salt and pepper or lime juice if desired. For best results, refrigerate for several hours, up to overnight, before using.
Recipe Tips
- If your tomatoes are small, you might want to use 5-6 tomatoes. You want to have at least 2 cups of diced tomatoes for the right balance of ingredients.
- Always taste and adjust the flavors of this easy mango pico de gallo to your liking.
- Be sure to chop the ingredients into a fine dice. Everything should be finely diced.
- Add more salt if needed, tasting after each addition. Be careful not to add too much.
- It is best if you can make this mango pico de gallo early in the day or the day before as the flavors will enhance after spending some time together in the refrigerator.
- Feel free to add in other ingredients, like diced avocado, or substitute diced peaches for the mango.
What to Serve with Mango Pico de Gallo
You can serve mango pico de gallo with everything from corn tortilla chips to air fried mahi mahi, salmon, chicken breast, salads, or your favorite fish tacos. Pico de gallo is good with so many foods!
How to Store Homemade Mango Pico de Gallo
- Pico de gallo is best stored in an airtight container in the refrigerator for up to 3-4 days. It's best eaten fresh, however, as after a couple of days the ingredients will become watery.
Pico de Gallo with Mango FAQ
While they both typically use the same ingredients, salsa is typically thinner and more liquidy, while pico de gallo is always chunky. Pico de gallo is essentially salsa fresca (fresh salsa).

Mango Pico de Gallo
Equipment

Ingredients
- 4 Roma tomatoes seeded and finely diced (about 2 cups)
- 1 Mango peeled, seeded and finely diced
- ½ cup red onion finely diced
- 1 Jalapeno pepper seeded and minced
- ¼ cup cilantro freshly chopped (or more to taste)
- 1 Lime juiced
- ½ teaspoon kosher salt or to taste
- Pinch black pepper or more to taste
Instructions
- Combine all ingredients in a bowl and mix well. For the best pico de gallo, make sure to finely dice all ingredients with no medium or large pieces.4 Roma tomatoes, 1 Mango, ½ cup red onion, 1 Jalapeno pepper, ¼ cup cilantro, 1 Lime, ½ teaspoon kosher salt, Pinch black pepper
