Pat mahi-mahi fillets dry with a paper towel. Spray both sides of each mahi-mahi fillet with oil spray and season with chili seasoning to coat each mahi-mahi fillet well.
4 Mahi-Mahi fillets, Oil spray, 1 tablespoon Chili seasoning
Place the mahi-mahi fillets in the preheated air fryer basket in a single layer.
Air fry 5-7 minutes. At 5 minutes check the internal temperature with an instant read thermometer inserted into the thickest part. It should be between 130-140°F. If not up to temperature, air fry another 30 seconds to a minute and check the temperature again.
Allow mahi-mahi to rest for 5 minutes before serving.
To serve garnish with fresh parsley, if desired, and enjoy!
Chopped fresh parsley

Notes
It's important not to overcook the fish, as it can become dry and lose its flavor and tenderness, so be sure to check the temp with an instant read meat thermometer.
Serve mahi-mahi over rice, as a salad topper, or a sandwich. These fillets also pair well with cauliflower rice for a low carb air fryer dinner, as a topper in rice bowls, and they make great air fryer fish tacos too!
Cook time may vary depending on your specific air fryer model. As always, use the cook time and temperature as a guide until you are more comfortable with your specific brand of air fryer.
If cooking in multiple batches, be sure to check on the remaining batches early, as they may cook more quickly.
