Homemade Pita Chips Ingredients
- Light Olive Oil: See our guide to air frying oils if you want more options, but we recommend light olive oil (not extra virgin olive oil) when making homemade pita chips. It's flavorful and has a high smoke point, so you don't have to worry about it burning in the air fryer. Olive oil is combined with the spices to brush onto the pita rounds.
- Italian Seasoning: If you don't have any Italian seasoning on hand, use ½ teaspoon of dried basil, dried oregano, dried thyme, dried parsley, dried rosemary, or a blend. Alternatively, test making pita chips using your other favorite seasoning blends. There are plenty of options! Allow yourself to be inspired by the seasoning of your favorite brand of pita chips and flavor them to your liking. You can even make them sweet by using a cinnamon sugar blend instead.
- Kosher Salt: You could also use sea salt flakes, but avoid table salt. Kosher salt or sea salt offer the best taste.
- Pita Bread: We used white pita bread for our photos and in the video to make this air fryer pita chips recipe, but you can also use whole wheat pita pockets without needing to adjust the cooking time.

How to Air Fry Pita Chips
Important safety note: You should never use parchment paper when air frying pita chips. The pita bread is not heavy enough to weigh down the parchment paper, and it will fly up into the heating element and potentially start a fire. In our extensive testing making this recipe, we tried using parchment paper, and it flew into the burner and nearly caught on fire. Make sure you do not use parchment paper, and always follow proper air fryer safety precautions when air frying. No easy cooking method is completely foolproof!

Step 1
Preheat your air fryer to 375°F. While it preheats, combine ½ cup olive oil, 1 Tablespoon Italian seasoning, and ½ Tablespoon salt in a small bowl.

Step 2
Using a silicone brush, brush the seasoned oil mixture onto both sides of each pita round. Add more oil if necessary to coat the pitas completely. If you don't have a silicone brush, you can use the back of a spoon, or cut the pita triangles and then toss them with the seasoned oil to coat completely instead.

Step 3
Using a sharp knife or pizza cutter, cut the pita rounds into eighths. You should have eight pita triangles per pita round.

Step 4
Once the air fryer is preheated, carefully place the seasoned pita chips into the air fryer basket in a single layer. It's okay if the wedges touch, but avoid overlapping.

Step 5
Air fry for 4-5 minutes until crispy to your liking. Remove from the air fryer to cool using tongs.

Step 6
Continue air frying the remaining pita wedges. Check on the remaining batches at 4 minutes, as they may cook a little faster than the first batch. Enjoy your homemade air fryer pita chips!
Toaster Oven Style Air Fryer Instructions
If using a toaster-oven style air fryer with a tray, such as the Breville Smart Oven Air, note that these models take longer to cook than air fryers with a basket. You will need to air fry pita chips for 5-6 minutes if using a model with a tray.
Recipe Tips
- To achieve the perfect crispness, avoid overcrowding the air fryer basket. If you overcrowd the air fryer basket the hot air may not circulate properly, resulting in chips that are too soft.
- Avoid using parchment paper for this recipe. The pita chips are not heavy enough to hold down the parchment. If the parchment flies up into the burner it will cause a fire.
- Use tongs to reach into the hot air fryer basket to prevent burns.
- Cook time may vary depending on your specific air fryer. As always, use the cook time as a guide until you are more comfortable with your specific brand of air fryer.
- When cooking in multiple batches, be sure to check on the remaining batches early, as they may cook more quickly.

Storage Instructions
- Store leftover pita chips in an airtight container such as a ziplock bag for up to one week. Pita chips do not need to be refrigerated.
FAQ
For gluten-free pita chips, you will need gluten-free pita bread. There are some brands that offer gluten-free pita rounds, such as Bfree and Against the Grain.
Make sure to coat your pita chips all over in the seasoned oil, and do not overcrowd the air fryer. If any of the chips are overlapping, they won't crisp up properly. You also want to be sure to preheat your air fryer before air frying pita chips.
White bean dips such as hummus are the perfect choice for pita chips, but you can also serve them with tzatziki, pesto, and even guacamole. The seasoning on the chips is versatile and pairs well with a variety of dips.
