Crispy Air Fryer Potatoes and Onions

Ingredients
 
 

  • 2 lbs red potatoes washed and cut into 1-inch pieces (about 8 medium red potatoes)
  • 2 Tablespoons oil
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon black pepper
  • 1 cup yellow onion about ½-inch dice
  • chives chopped, for garnish (optional)
  • garlic butter melted (optional)

Instructions
 

  • Preheat the air fryer to 400°F. If your air fryer does not have a preheat function, allow it to run for 5 minutes without anything in the basket.
  • Cut and wash 2 lbs red potatoes, then add them to a medium mixing bowl. Add 2 Tablespoons oil to the bowl, along with 1 teaspoon kosher salt, 1 teaspoon garlic powder, 1 teaspoon dried Italian seasoning, and ½ teaspoon black pepper. Mix to completely coat the potatoes.
  • Open the air fryer and pour potatoes into the preheated air fryer basket.
  • Air fry at 400°F for 10 minutes. While the potatoes cook, dice 1 cup yellow onion. After 10 minutes is up, open the air fryer basket and add the diced onions. Shake the basket to distribute, then continue air frying another 10 minutes or until potatoes are golden brown and the onions are soft and translucent.
  • Remove the potatoes and onions from the air fryer to a serving dish and garnish with chopped chives and a drizzle of garlic butter if you like. Serve and enjoy!

Notes

  • We leave the skin on the potatoes, so be sure to scrub the potatoes well. You can also peel them if preferred.
  • If your potatoes are larger than pictured, then you may need to add more to the cooking time.
  • Cut the onions to about ½-inch thickness. If the onions are too small they may fall through the holes in your air fryer, but they will still cook nicely, so just be sure to remove the tray when done so you don’t miss out on any onion-y goodness!
  • We use garlic powder in this recipe instead of fresh garlic. Fresh garlic tends to burn in the amount of time needed to air fry the potatoes.
  • You can use your preferred vegetable oil. We recommend olive oil or avocado oil.
  • Cook time may vary depending on your specific air fryer model, as all brands vary.
  • If cooking in multiple batches, be sure to check on the remaining batches early.
